Slow Cooker French Onion Crockpot Meatballs

To make homemade meatballs: Preheat oven to 400F. Combine ground beef, eggs, breadcrumbs, Romano cheese, fresh ground pepper, and chopped parsley. Place the 2-3 peeled and smashed garlic cloves and 1/2 cup olive oil on a rimmed baking sheet. Form meatballs (using a small ice cream scoop) and place them between the bits of garlic. Bake for 10 minutes. Place meatballs on paper towels to absorb excess oil.

For the slow cooker: You can either add the 2 sliced onions into the crockpot raw, or caramelize them a little if you have time. In the crockpot, whisk together the beef bone broth, minced garlic, Worcestershire sauce, soy sauce, and brown sugar until combined. Add the onions in an even layer. Place either the pre-baked homemade meatballs, or 24 raw premade meatballs, in 1 even layer on top of the onions. Cook on high for 4 hours, or until your meatballs are cooked through. Add the shredded mozzarella cheese on top, and keep covered on the warm setting until cheese is melted or you are ready to serve. Serve with egg noodles, rice, or a side of veggies.
